CAOL ILA // 10 YEAR OLD
A delicious Caol Ila single cask
Matured in a Barrique that had held our 2024 release of Ben Nevis; there it gathered a texture and mouthfeel from residual tannins in the oak. However, its final home in American oak First Fill Woodford Reserve Bourbon barrel has given it creaminess, weight and sweet toffee notes.
We stored this at the very top of the 14 tier high racking system for what was a gloriously
warm summer of 2025. There’s something special that happens up there in the lofty, warm rafters.
NOSE
Gentle maritime smoke with notes of toasted oak, sea salt and sweet maple covered bacon. Baked goods, toffee, vanilla cream and citrus zest add lift and sweetness.
PALATE
Bright and smoky with layers of charred lemon, brine and soft peat. Mid-palate notes of toffee, baked apple and light texture from wine cask meet a warm wave of bourbon sweetness. The finish is long, saline and gently spiced, with lingering smoke and sweet malt.
