The second oldest whisky in Outturn IX, and a fine example of why this distillery has such a loyal following. Seventeen years quietly maturing in refill bourbon, then re-racked into a first fill Oloroso sherry hogshead from a producer we know and love for its final year. It was fine before. It's much better after.
Eighteen years has given it a rich orange colour and a deep, waxy character. Quince and red apple skin on the nose, with honey, beeswax and orange blossom, a lanolin waxiness, toasted herbs and a whisper of charred pine. Bergamot, orange rind and honey on the palate, oily and textured, with polenta cake and orange marmalade. Long and dry to finish, closing on a bitter orange amaro note that holds on and on.
Bottled at natural cask strength, without chill filtration or added colour. Hand bottled and hand labelled in Leith.
