A single cask of Dalmunach, fully matured in an Amontillado sherry hogshead.
The Blind Summit touch here is that a portion was drawn off into a 30 litre Amontillado bloodtub, then married back together. This gave the mid palate concentration we felt the cask was missing, plus a little more aromatic lift. We had far too much fun writing the notes for this one. A fragrant dram, with stewed green apple, white grape, melon and gooseberry on the nose, a touch of rancio, then pistachio and orgeat, green tea and orchard blossom. Rich and round on the palate, oxidising green apple and yellow fruit with almond and pithy nut skin, toffee and fudge developing, then ginger and gentle spice. Long and fleshy to finish, with oak, green apple skin and carrot cake spice.
Bottled at natural cask strength, without chill filtration or added colour. Hand bottled and hand labelled in Leith.
