A big moment for us, our first white wine matured whisky, and the combination has come off brilliantly. The barrique brought layers of almond, yellow fruit and ginger without ever burying the distillery character. Peach Campinos, dried mirabelle plum, apricot and white grape must on the nose, with almond croissant, icing and amaretti. Instantly inviting. Prickly at full strength but creamy with it, almost lees-y, with lemon curd, peach, pear and fleshy yellow fruit over chamomile honey. Toasty almond kernel and frangipane, buttery with nutmeg. Long to finish, with brown sugar almond cake, juicy plums and ginger spice at the end.
Bottled at natural cask strength, without chill filtration or added colour. Hand bottled and hand labelled in Leith.
