From a single cask of Macallan, distilled in 1989 and matured in one refill bourbon hogshead. A release two years in the making, and one of the most significant things we have produced.
The cask was split and racked into two very different finishing casks: one Rivesaltes fortified wine and one Barbados rum. We returned to both regularly, making sure the essence of the whisky was never lost and that each finish added to the liquid rather than taking over. When the balance was right, both expressions were bottled side by side.
The Rivesaltes is honeyed, layered and contemplative, with preserved marmalade, dried apricot and candied orange peel over a waxy, settled base. The Barbados rum finish is darker and more generous, with toasted coconut, molasses, charred oak and a long, dry finish of leather and black pepper.
Two distinct single malts with a common ancestry, presented as a comparative set. Each set is individually numbered, one of only 30 worldwide, and comes in a felt lined gift box developed with an Edinburgh packaging company. Every bottle is hand labelled and individually wax dipped. A reversed cut out label means the artwork reflects across both bottles, forming one continuous image when displayed as a pair.
