An Australian apera cask — the Aussie equivalent of a sherry cask, this one feels closest in flavour to a palo cortado — filled with waxy Dailuaine

SPRING SIPPER

It has spent ten years quietly maturing in a refill bourbon hogshead. With just under a year in the apera before bottling, we matured it at the very top of the warehouse, through a warm Scottish summer and a long winter. It’s a big dram for spring.

TASTING…

NOSE

Charr and toast, then red apple, yellow pear and autumn fruits and spice. Roasted almonds, hazelnuts and walnuts alongside bitter orange zest and dried apricot.

PALATE

Warming and well-textured. Rich toffee and caramel, with more red apples and more roasted nut character. The fruit carries well but the texture is what strikes you.

FINISH

Long and fleshy, with red grape skin, red apple, a nuttiness with a herbal finish.
