DALUAINE 11

An Australian apera cask, the Aussie equivalent of a sherry cask, this one feels closest in flavour to a palo cortado.

Filled with waxy Dailuaine that had spent ten years quietly maturing in a refill bourbon hogshead. With just under a year in the apera before bottling, we matured it at the very top of the warehouse, through a warm Scottish summer and a long winter.

NOSE

Roasted almonds, hazelnuts and walnuts alongside bitter orange zest and dried apricot.

PALETTE

finish

Long and fleshy, with red grape skin, red apple and a lingering nuttiness.

Warming and well-textured. Rich toffee and caramel, with more red apples and more roasted nut character. The fruit carries well but the texture is what strikes you.
